Ingredients
- 2 medium beets, peeled and diced

2 medium potatoes, diced

1 small onion, chopped

2 tbsp olive oil

2 tbsps Let The Beet Drop Seasoning

Salt and pepper to taste

Fresh parsley for garnish
Directions
Heat olive oil in a large skillet over medium heat.
Add the onions and cook until they become translucent.
Add the diced beets and potatoes. Sprinkle with Let The Beet Drop Seasoning, salt, and pepper.
Cook, stirring occasionally, for about 15-20 minutes or until the beets and potatoes are tender and slightly crispy.
Garnish with chopped fresh parsley before serving. Enjoy as a hearty breakfast or a side dish!
