Marshmallow Popcorn

Ingredients:

• 1/4 c. un-popped popcorn kernels (or 1 bag of microwave popcorn - the fat free kind)
• 1/3 c. butter
• 1/3 c. brown sugar
• 2 1/4 c. mini marshmallows

Directions:

1. Melt butter in a saucepan. 
2. Add brown sugar and marshmallows. 
3. Stir until melted. 
4. Pour over popcorn & mix to coat. 

Chef’s Note:

• Did you know that you can make your own microwave popcorn by just putting popcorn into a brown paper bag & folding over the edges?  So much cheaper...and healthier!
